On Monday it was back to work...but there was TONS of excitement for Chicken Taco night! We got home from work and got rolling on dinner. The chicken was coated in spices and cooked on the stove. While that was happening, delicous, fresh and colorful produce was chopped to make the salsa. I've never cooked with mango before, but I can't wait to scour through new recipes for this sweet and tasty ingredient! We decided we would happily top almost anything with this great salsa! Dinner was a great treat and the perfect start to our adventure of pulling things from our box!
